Today, I made Lenturkey soup! Yes, I made it up. But its oh-so-good.
It consists of:
1 LB ground turkey. This stuff is very lean, and surprisingly cheaper than beef.
1/2 a small white onion, chopped.
6 cups of chicken broth, but vegetable broth would work, too.
One clove minced garlic. Don't forget to smash it.
A handful of frozen mixed veggies.
1 cup of lentils. I used the kind you didn't have to pre-soak. Lentils are really healthy for you.
Some cayenne pepper
a dash of salt
some black pepper
fresh parsley
fresh thyme
a bay leaf
Step 1- cook the ground turkey
Step 2- caramelize the onion and the garlic in the same pan you cooked the turkey in.
Step 3- toss everything into the crock-pot. Mine took 3 hours on high. All day on low would probably work just fine.
Step 4- Enjoy!
I also ran the dog, took some photos, and enjoyed the gorgeous day. I day dreamed a bit, and here I am!
