I'll take things with noodles, for $400

I have been doing pretty good keeping up with my goal of making a home made meal once a week. So far, Sundays have been it. Last week I made Yaki Udon last Sunday. It was really yummy. I went and spent a whopping $30 at the Asian food market. It was pretty simple to make.

What you need:
1 package of Udon noodles
Some shredded carrots
Shredded cabbage
shitake mushrooms
Bean sprouts
2 chicken breasts
Some Tankatsu sauce
soy sauce
water
sesame oil


Cook one package of Yaki Udon noodles according to the instructions on the package. The noodles should be in the refrigerated section in the grocery store. Make sure to rinse them off, because they have some starchy stuff on them that makes the sauce kind of weird. Cook the chicken in a small amount of oil. Throw in the noodles, and some sauce. The Tankatsu sauce is really thick, and really sweet. Make sure that for every quarter cup of sauce you put in, you throw in an equal amount of water. I put in some more sesame oil and some soy sauce too. I threw the veggies in last, because I don't like soggy vegetables. Taste it. Honestly, I'm a terrible recipe writer because I find a recipe and tweak it. I have no idea what I do, I just make it taste okay.

I forgot to add water the first time. I mean, honestly, someone FORGOT TO TELL ME I SHOULD DILUTE THE SAUCE, so it was all thick and really, really sweet. I threw it all back in the wok and added water and it was much better. This makes a ton. It fed me for a week.


I've had an okay week. We had a snow day due to WIINNNNNDDD CHIIIILLLLL VAAALLLLUESSSS, and the next day was a two hour delay, so the week was kind of a bust. This week is looking to be the same way. I need a vacation. I need an extended amount of time for me to craft, and cook, and spend time with horses. I love my job, and I love my kids, but I know I can't be here forever. I'd die.

Last night I made peach crisp, with wonderful peaches that I about died canning this summer. I just throw them in a pyrex baking dish with some corn starch to thicken up the syrup, and throw a mix of oatmeal, flour, brown sugar and lots of butter over the top and bake it for about 45 minutes on 350. Its quite yummy.

Today, I came home from church and made Oreos. I've been eyeballing the recipe here: http://www.mybakingaddiction.com/homemade-oreos/ and wasnt quite sure what to do. I can't get dark cocoa, and I didn't want to use too much cocoa. I also didn't have shortening on hand, so I used butter as a substitute. Butter does not work well. Butter doesn't hold it's shape very well. Either way, they taste really, really good. They could be a little crunchier, but next time I know what to do. For dinner, I made turkey soup with home made noodles. The noodles are really easy: 2 cups of flour, 1/3 cup milk, and an egg. I don't like my homemade chicken soup to have a very watery broth, so I thickened it up with some flour (thanks Mom!) and it was amazing. Leftover turkey from Thanksgiving = great soup now.
I have two hats to finish tonight. An arctic fox and a dog. I'm not a fan of the dog hat, myself, but she wanted it, so whatever, I guess. I started planning my garden tonight. Let's just say that it's not big enough for everything I want in it.
